Got an extra ripe banana? How about a Banana Muffin in a Mug? Quick, microwavable and vegan too!
This Banana Muffin in a Mug is such a great way to use up an extra ripe banana for a quick, tasty treat anytime time of the day! There’s no egg in this muffin and you don’t need to add any oil if you choose not to. Want to jazz it up a bit? Try adding chopped walnuts or chocolate chips. I like to sprinkle turbinado sugar on top for a little extra sweet crunch.

- 1 extra ripe banana
- 1/2 tsp. vanilla extract
- 2 tsp. oil (optional)
- 4 Tbls. flour
- 1/4 tsp. baking powder
- 1/4 tsp. cinnamon
- big pinch of salt
Optional add-ins/topping:
- Chopped walnuts
- Chocolate chips
- Turbinado sugar for sprinkling on top
Instructions
- In small bowl mash the banana with vanilla and oil, if using.
- In mug, add flour, baking powder, cinnamon and salt. Stir to combine well.
- Add banana mixture to mug and mix in. Add any desired add-ins.
- Microwave about 1.5 – 2 minutes (depends on your microwave), top with sprinkle of Turbinado sugar and let sit a minute before eating.
