What to do with a juicy ripe peach? Make this yummy Bourbon Peach Cocktail of course!
As I’ve said before, I’m not a big whiskey/bourbon fan but I do enjoy it doctored up a bit with other flavors. This cocktail is a bit similar to my Whiskey Ginger Cocktail. Today I muddled half a juicy ripe peach with a few mint leaves and brown sugar simple syrup, shook it all up with some bourbon and topped it off with a splash of ginger beer. It’s a delicious, refreshing cocktail and a great way to eat your peaches!

PrintBourbon Peach Cocktail
Ingredients
- 2 oz. bourbon
- 1 oz. simple syrup*
- 1/2 ripe peach
- about 4 or 5 mint leaves
- splash of ginger beer
Instructions
In cocktail shaker muddle the peach, mint leaves and simple syrup with some crushed ice. Add bourbon and shake well. Strain into cocktail glass filled with ice. Top with a splash of ginger beer.
Notes
*I made a brown sugar simple syrup by combining 1 cup brown sugar with 1 cup water and bringing it to a boil. Let cool and store in refrigerator. Read more about making simple syrup here. You could also use regular simple syrup or maple syrup.
