This Bourbon Peach Crumble is so good and so easy! And a perfect way to eat up all the yummy peaches this time of the year. I bought a box of peaches from Costco and used all nine of the peaches in this recipe. I suppose you could also use frozen (thawed) peaches if you want, but I haven’t tried that.
I found a recipe for peach cobbler from Pinch of Yum and thought the crust sounded sweet and delicious. For the peach filling I used brown sugar and bourbon to make it just a tad bit more special… inspired by my boyfriend’s love of bourbon.
I highly recommend devouring this delicious dessert warm with a big scoop of your favorite vanilla ice cream!

Ingredients
Peach filling:
9 peaches
1/3 C. brown sugar
2 Tbls. cornstarch
1/3 C. bourbon
Crumble crust
1 C. flour
3/4 C. sugar
1 tsp. baking powder
pinch of salt
1 tsp. bourbon
1 stick butter, melted (1/2 C.)
1/4 C. Turbinado sugar (Sugar in the Raw)
Instructions
Preheat oven to 350°
Pit and slice peaches. Peel them if you want to (I did not peel them). Toss with brown sugar, cornstarch and bourbon. Pour peaches into 9x 11 baking dish.
In separate bowl, add flour, 3/4 c. sugar, baking powder, salt, bourbon and melted butter. Stir until combined and crumbly.
Distribute crumble mixture over peaches. Bake 30 minutes. Sprinkle 1/4 C. Turbinado sugar over crumble and continue cooking another 10 minutes, until golden and crisp on top.
