A little bit creamy and oh so delicious, this Lemon Meringue Martini tastes like a slice of lemon meringue pie – with a boozy kick!
When I was in California this past month, my son and his friend asked me to make some Gin Sage Martinis for them. Nice to know they must have checked out my Instagram to even request them! I was happy to oblige and hurried out to buy some sage to make the sage simple syrup. Came time to shake up a batch when we discovered they didn’t have any gin. Well, there was gin, just not any decent gin that they would drink (picky drinkers). Instead I made them with bourbon which I’m told were very good. If you’re a bourbon drinker you might want to give it a try! I’m not much of a bourbon drinker so I shook up my favorite Lemon Drop Martini instead. And since I really liked the egg white foamy top from those Gin & Sage martinis I thought I’d add an egg white to my lemon drop.
OMG, it tasted just like a lemon meringue pie. Brilliant! I think I may have had two of them (okay, maybe three…ssshhhhh don’t tell, we were just having fun). I made them with Meyer lemons which were fantastic, but if you can’t find Meyer lemons, a regular one will do just fine.
If you’re concerned about consuming a raw egg white, you can buy pasteurized eggs and pasteurized liquid egg whites. While I have not tried this with liquid egg whites, I can’t imagine it would produce any different results.
Try something a little different with your Lemon Drop martinis this weekend and give this Lemon Meringue Martini a try. It’s delicious! I think you’ll really enjoy it.

Ingredients
- 1 shot vodka
- 1/2 shot Triple Sec
- 1/2 lemon, juiced (recommend Meyer lemons if you have it)
- 1/4 – 1/2 shot simple syrup (depending on your sweetness preference)
- 1/4 – 1/2 shot limoncello (optional)
- 1 egg white
Instructions
- For a sugar rim, run a slice of lemon around the edge of the glass, then dip in sugar. Set glass aside. Or just garnish the glass with a lemon slice, whichever you prefer.
- Combine vodka, triple sec, simple syrup, limoncello (if using), lemon juice and egg white in cocktail shaker without ice. Shake well. Then add ice and shake again to chill the cocktail. Strain into martini glass.

Shaking it without ice first seems to make it foamier and separate better (or maybe it’s just my imagination). If you don’t care then just shake it all together with ice the first time around.
