Pineapple Coconut Rum Cooler

Ingredients

Units Scale
  • 2 oz. Rum (I used Bacardi)
  • 1 oz. Coconut Rum (I used Malibu)
  • 2 oz. Pineapple Coconut Juice (could use nectar)
  • 1 oz. Ginger Lime Simple Syrup
  • Club soda

To make the simple syrup:

  • 1 cup Sugar
  • 1 cup fresh Lime Juice
  • 4 Tbls. grated fresh ginger

 

Instructions

Make the simple syrup:  Combine sugar, lime juice and ginger in a small saucepan.  Bring to a boil, reduce heat and simmer a few minutes.  Set aside to cool.  If you want a bit sweeter simple syrup use 1/2 cup lime juice and 1/2 cup water.

To make the cocktails: Combine cocktail ingredients except club soda in cocktail shaker filled with ice. Shake well and pour into 2 glasses filled with ice.  Top each drink with club soda.
