Have you heard the big news? Starbucks is serving up their Pumpkin Spice Lattes again. I’m not sure what the big deal is about…I’ve never had one. But everyone seems to go gaga over them, or anything pumpkin for that matter the day the calendar strikes September 1. For me, I’m still holding on to summer. It’s 90+ degrees outside and humid so I’m making this Pumpkin Spice Latte Ice Cream Float instead! This is my take on the famous latte…or what I think it might taste like…cold, with ice cream!
I saved some leftover coffee in the refrigerator for iced coffee. If you don’t have any leftover coffee just make a cup and chill it down. Sometimes I’ll even make ice cubes out of leftover coffee to use in my iced coffee, but not today. Today I’m using ICE CREAM! How awesome is that? Besides my favorite Cantaloupe and Ice Cream, another one of my favorite ways (I have lots of favorites) to eat ice cream is to pour some coffee over a scoop of vanilla ice cream. So it made perfectly good sense to me to make this Pumpkin Spice Latte Ice Cream Float today. My nod to what’s about to become everything pumpkin on Pinterest, blogs and anything food related for the next couple months.
To get the pumpkin spice flavor for this ice cream float I used some Torani pumpkin pie flavored sauce that I had leftover from last year’s Pumpkin Pie-tini. It’s sweet so it took the place of sweetener in my coffee. And, since I’ve heard the “food police” are up in arms the Starbucks’ drink doesn’t have any real pumpkin in it (do people really think it would?) I added some pumpkin puree and a little extra pumpkin pie spice to it for good measure. You know, to make it healthy and all. If you don’t have pumpkin pie spice you can make some easily enough from spices you most likely already have in your pantry.
Pumpkin Pie Spice Blend
To make your own pumpkin pie spice blend, just combine the following:
2 tsp. Cinnamon
1 tsp. ground Ginger
1/2 tsp. clove
1/4 tsp. nutmeg
Now, on to making the Pumpkin Spice Latte Ice Cream Float. Put a few scoops of your favorite vanilla ice cream in a tall glass. Add some pumpkin spice puree to your reserved cold coffee and pour it over the ice cream. Top with whipped cream, a sprinkle of pumpkin pie spice and a good drizzle of the Torani pumpkin pie flavored sauce.

Ingredients
- 1 C. cold coffee
- splash of half & half (use amount you would typically use in a cup of coffee
- 1 Tbls. pumpkin puree
- 1 Tbls. Torani pumpkin pie flavor sauce
- couple shakes of pumpkin pie spice
- vanilla ice cream
- Whipped cream
Instructions
- Combine pumpkin puree, Torani pumpkin pie flavor sauce, and pumpkin pie spice with coffee. Stir well to combine.
- Fill glass with scoops of vanilla ice cream. Pour coffee over ice cream. Top with whipped cream, a sprinkle of pumpkin pie spice and a drizzle of the Torani sauce.
