My niece, Allison, sent me a recipe for this Super Simple Quinoa Salad that she had made and thought I’d enjoy. Yes, I did! It’s incredibly simple to make and full of flavor. And, no laboring over a hot stove involved (well, other than making the quinoa but you could buy that already made in a packet).
This protein packed delicious salad is full of quinoa, shelled edamame, black beans, red bell pepper, corn and red onion all married together with a balsamic vinaigrette. I adjusted the original dressing recipe to my liking.
I ate this super simple Quinoa Salad for lunch… and again for dinner (and to be truthful, again for lunch the next day)! If you have meat eaters in the house it would be a nice side dish to their favorite grilled meat or fish.

Ingredients
1 C. Quinoa (prepared according to package directions)
1 C. frozen, shelled edamame, thawed
1 C. frozen corn, thawed (fresh, grilled corn would be delicious!)
1 red bell pepper, diced
1 can black beans, drained and rinsed
1/2 C. diced red onion
Optional garnish: parsley, lemon, scallions
For the Dressing:
1/4 C. balsamic vinegar
3 Tbls. lemon juice
2 Tbls. olive oil
2 Tbls. whole grain mustard
2 Tbls. honey (could use agave or maple syrup)
2 cloves garlic, minced (I used 1 big clove)
1/2 tsp. salt
1/4 tsp. pepper
Instructions
Combine dressing ingredients in jar and shake well. Taste and make flavor. adjustments if needed. Set aside.
Prepare quinoa according to package directions.
In large bowl, combine quinoa, edamame, corn, bell pepper, black beans, onions. Add dressing and toss well to combine.
Garnish with parsley, lemon and sliced scallions, if desired.
