It’s been a little while since I’ve made a plant based/vegan meal so today I have some quick and tasty Spicy Tofu Black Bean Lettuce Wraps.
Some crumbled firm tofu is sautéed up with a little diced onion, Mexican seasoning, a can of diced tomatoes and a can of black beans. I also added a little nutritional yeast, but you could omit that if you don’t have any. To finish it off, I used a plant based sour cream that I thinned out a bit with water to drizzle over the wraps, added avocado slices and some chopped cilantro. You could also add some of your favorite vegan shredded cheese and a squeeze of lime if you want.

Ingredients
- 1 block firm tofu, drained, pressed and crumbled
- 1/2 onion, diced
- 2 Tbls. olive oil
- 2 Tbls. Mexican Seasoning Blend
- 2 Tbls. Nutritional Yeast
- 1 – 14.5 oz. can diced tomatoes
- 1 – 14.5 oz. can black beans, drained and rinsed
- 1 head baby romaine lettuce, leaves separated
Garnish:
- sliced avocado
- chopped cilantro
- vegan sour cream
Instructions
In large skillet, heat olive oil over medium-high. Add onion, crumbled tofu and Mexican seasoning blend. Cook until onion is soft and mixture is combined.
Add nutritional yeast, tomatoes, and black beans. Simmer about 10 minutes for flavors to combine.
To serve, place some tofu/black bean mixture on individual lettuce leaves. Top with desired toppings.
