Spicy Tofu Black Bean Lettuce Wraps

Ingredients

  • 1 block firm tofu, drained, pressed and crumbled
  • 1/2 onion, diced
  • 2 Tbls. olive oil
  • 2 Tbls. Mexican Seasoning Blend
  • 2 Tbls. Nutritional Yeast
  • 114.5 oz. can diced tomatoes
  • 114.5 oz. can black beans, drained and rinsed
  • 1 head baby romaine lettuce, leaves separated

Garnish:

  • sliced avocado
  • chopped cilantro
  • vegan sour cream

Instructions

In large skillet, heat olive oil over medium-high.  Add onion, crumbled tofu and Mexican seasoning blend.  Cook until onion is soft and mixture is combined.

Add nutritional yeast, tomatoes, and black beans.  Simmer about 10 minutes for flavors to combine.

To serve, place some tofu/black bean mixture on individual lettuce leaves.  Top with desired toppings.
