I was in the mood for tacos but didn’t have any tortillas, only tortilla chips so I made Taco Nachos instead!
These Taco Nachos have most of the same ingredients found in tacos… ground beef, cheese, salsa, sour cream, etc. If you want a plant based version, simply substitute your favorite vegan alternatives. I added some refried beans, sliced grape tomatoes, a sprinkle of cotija cheese, avocado and lime. Basically just layer your tortilla chips with whatever you like on your tacos! So easy and always delicious!

Ingredients
- Corn tortilla chips
- 1 lb. ground beef
- 2 Tbls. Mexican seasoning blend (homemade Mexican Seasoning Blend)
- 1/2 onion, diced
- shredded cheddar cheese (lots!)
- 1 small can refried beans
Topping suggestions:
- diced tomatoes
- diced avocado
- crumbled cotija cheese or queso fresco cheese
- chopped cilantro
- black olives
- sour cream
- salsa
- lime slices
Instructions
Preheat oven 350 degrees.
In frypan cook ground beef with diced onion and taco seasoning until cooked through. Drain excess fat if needed.
On large cookie sheet, place a layer of corn tortilla chips, followed by grated cheddar cheese (I like lots of cheese!), dollops of refried beans and the ground beef. Heat in oven until cheese is melted.
Top the nachos with your favorite toppings and dig in!
