Here’s a fun way to serve the popular wedge salad… a Wedge Salad on a Stick! It makes a unique appetizer and who doesn’t like nibbles served on sticks?
My favorite wedge salad has balsamic vinaigrette with crumbled blue cheese on top instead of a blue cheese dressing. So for today’s Wedge Salad on a Stick I used a base of blue cheese dressing on the serving tray and drizzled balsamic glaze on top. Then garnished with blue cheese crumbles and sliced green onions. You can always serve additional blue cheese dressing if you want more.

Ingredients
- Iceburg lettuce, cut into chunks
- Bacon, cooked and cut in large pieces
- Grape tomatoes
- Blue cheese salad dressing
- Blue cheese crumbles
- Balsamic glaze
- Sliced green onions
- Skewers
Instructions
Cut lettuce into chunks the size you’d like for your skewers, about 1-2″ pieces.
Cook bacon (not too crisp or it may break when putting on the skewers), drain on paper towels, then cut the bacon strips into pieces, about 1-2″ in size.
Assemble your skewers by alternating lettuce, bacon and grape tomatoes.
Pour your favorite blue cheese salad dressing on a serving platter. Line up the skewers. Drizzle with balsamic glaze and top with crumbled blue cheese and sliced green onions. Serve with additional blue cheese dressing and balsamic glaze, if desired.
